Title: Roasted Mixed VegetablesDescription:Long, slow roasting to bring out flavour. I throw in different kinds of squash, yams, turnips, carrots, ordinary onion, sometimes potatoes.... As a kid I was so against squash, yams, turnips, carrots and usually raised a fuss. I guess I've come around...sure makes for bright colours on your plate; a good guide for healthy eating...Ingredients:1 red onion2 red bell peppers, seeded and sliced1 yellow bell pepper, seeded and sliced1 yellow squash, sliced diagonally [however you want]4 garlic cloves, peeled and chopped1 teaspoon dried thyme1/4 teaspoon salt1/4 teaspoon black pepper2 tablespoons balsamic vinegar (Optional)Directions:Preheat oven to 400 F. degreesCombine all the ingredients, except balsamic vinegar, together in a baking pan, [I use roasting pan], and cook for about 1 1/2 hours or until well browned.Sprinkle with balsamic vinegar [Optional]Serve hot, cold, or at room temperatureNumber Of Servings: lots - freezes wellPreparation Time: 20 min + roasting time Topic New Topic Reply to Topic Printer Friendly
